One awesome product to consider is MindMapper 4
Works very well when laying out a site. Particularly find it useful when
developing ColdFusion sites as it allows me to determine the functional
requirements for a site very quickly.

It also enables you to publish the mind map you create to the web. This can
be very useful to allow you to talk your client through the site.
