Its a good idea, but I really would like to design my site, myself as I kind
of example of what I can do! Or where you just taking the piss in that
email!?

If I were you I would refuse to work for yourself or, if you still want the
contract, charge yourself a higher fee. If that won't work, go to tight
briefs and offer £15.00 for an 8 page site. Get the first 3 or 4 takers to
design your site, pay up and then display the sites on a monthly basis. It
saves you doing all these monthly changes yourself!
Is £15.00 too much?
