Well ... there are plenty of info/directory sites for my area (the
Cotswolds), but none of them will be able to touch the depth of
information I'm building into cotswoldweb.net - basically every pub,
guest house, b&b, hotel and tourist attraction in the area,

If you dont steal his entire links section verbatim, I doubt there is
much he could do in the eyes of the law. However, you site would have
to offer something else above what his does to compete (or you could
just have better search engine rankings I suppose ;))
