If they have asked you to do further work then they value what you do and
should pay the price.
We got very done before we started to realise that we are in business to
make money and not do favours. So, with the benefit of experience -
forcefully and politely explain this is *the amount* for they work they
requested that you do and that this is what the non-negotiable bill is. You
could if needed, point out that correspondence about this job by e-mail
could well form an assumed contract.
If you can manage it and know they will honour it then accept two cheques
one post-dated to a few weeks away it makes them feel you are trying to
help. Under no circumstances do this is you think they might cancel the
second cheque.
And never do any work without a contract in place again
