Simple letter suggestion:
"I would like my domain [name], for my business. I've used that domain
name for [x] years and have a legitimate right to it, which you don't. I'll
pay you what I normally pay - [£10 for .co.uk, whatever]."
Follow up, if no go and they're in the UK:
"I repeat my offer. I would be grateful for your fast response and
acceptance of my offer, failing which I shall make a complaint of extortion
to the Police."
Perhaps more diplomatic, but hope you get the point.
