Depends on the time-to-live values set in the DNS records. These can be
different for web server and e-mail server, but usually they'd be the same
value. The best way to transfer domains, if you have the control, is to
set the TTL values to something like ten minutes before you start the
transfer, let that change propagate across the internet, and only then
change servers. The server change will then propagate within ten minutes,
then you can set the TTL back to a longer time.
FWIW if no-one has requested your DNS record, then the old value won't be
cached anywhere, and it'll transfer instantly :)
