Nigel,
On a couple of my sites, I've added a bit of code where the user is
asked to enter the number ONE, in the following box, etc...
The form handler checks this field for 1, and just bounces the
submission if it's not been completed.

Seems to have cut down form spam from these two sites to virtually nil.
This said, I'm quite reluctant to introduce this method on online order
forms on some of my other sites, as I would not like to lose proper
orders, just because the punter did not understand the request to type
in the number ONE.
