Just point the DNS records for the web site (A) to one server, and the
e-mail ones (MX) to the other.

I use Gradwell.com for my secondary DNS and backup e-mail, and they're
been reliable over the years. They probably do a full e-mail service too.

I'd avoid UK2.net from past experience.

Look for decent spam and virus filtering :)
