Here are three that I have used.

Building Web Services with Java (Developer's Libary) 0-672-32641-8
Java Web Services (O'Reilly) 0-596-00269-6
RESTful Web Services (O'Reilly) 0-596-52926-0

One small piece of advice (and it is by no means a universal point of
view). Unless you really have to work with SOAP, take the RESTful
route in building Web Services. REST provides a radically shallower
learning curve than traditional SOAP Web Services. The final book in
the list above is very good - covers not just Java but also RoR,
Python and various other languages/Frameworks.
