That sounds excessive... are you scanning very-large messages, or using
fancy rules? Do you have DNS issues causing DNS-related checks to pile up
in the queue?

I'd recommend MailScanner (http://www.mailscanner.info), which integrates
virus scanning and spam filtering: use ClamAV and spamassassin for a free
solution. MailScanner has many clever features and optimisations, and may
help with your excessive spamassassin requirements. MailScanner is used in
many very-large-scale e-mail systems, as well as many smaller ones (like
mine!).
Also replace Rules du Jour with one of the available feeds for sa-update
for the SARE rules (can send a howto if needed), and trim to just load the
safest rules.
